Our Olio Nuevo Olive Oil is made from Coratina, Frantoio, Moraiolo, Maurino, Pendolino and Leccino varietals. We are in the process of relocating these 12 year old Tuscan olive trees to the orchards at Olivas de Oro from a nearby property. They were harvested and pressed at Olivas de Oro on November 29, 2016. We donít hold our Olio Nuevo in tanks to allow the fruit particles and other sediment to settle before bottling like we do for our other extra virgin olive oil. Thatís why you should consume Olio Nuevo at the earliest.
It is the freshest possible extra virgin olive oil you can find. When you put a spoonful of Olio Nuevo in your mouth, you experience a peppery, fruity, pleasantly bitter burst of fresh olive taste. Olio Nuevo heralds the new olive oil season.
We particularly like Olio Nuevo on salads because the flavor just explodes. Itís also great drizzled over bruschetta and roasted vegetables Ė or tossed with pasta. And, of course, itís great for dipping. Since it is so fresh and has so much flavor we recommend that you use Olio Nuevo as a finishing olive oil.
